Our Cellar
Our cellar compartment is divided into three environments:
- the oldest building where we placed the cement vessels used for our Nebbiolo’s long maceration on the skins.
- a more recently built area which is partly designed to host the bottling machine and to store wines during the final refining in bottle.
- a basement destined to several oak barrels used for ageing red-grape wines. The room is six meters under the ground level so as to keep both the temperature and the humidity stable right through the year. Depending on the style of wine we want to achieve, we use either Slavonian oak barrels of 3,000 liters capacity, smaller French oak vessels of 1,500 liters capacity or tonneaux.
